Organic wine: Manual harvest for small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with controlled temperature around 16ºC. The grapes are pressed without crushing and without destemming under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine is fermented in used French oak and remains there after a small racking over fine lees with periodic “battonage” stirring until the final blend is made. 6 months in French oak barrels, fermentation and agitation stage with fine lees, coming from the very sandy Upper Douro granitic soil at an average altitude of 575 meters. It has a citrus and mineral aroma, grapefruit notes, discrete exotic fruits and country flowers. Very persistent and fresh mouth with very lively citrus notes, resulting in a very elegant set.

Straw yellow color, aroma of dried fruits (nuts, hazelnuts), very ripe pineapple, melon, harmonious, elegant, great evolution. Fruit present, some oak, good acidity, complexity. Long finish. Monte da Ravasqueira Encantado White

Separate fermentation in stainless steel tank and transfer to French oak barrels (20% new / 80% used). Subsequent aging at low temperatures, remaining on the lees with light battonage for 4 months before bottling. The name Encantado tells the story that takes place in the roots of the vineyards in harmony with the cork oak forest and all the fauna and flora of this rich territory, which gives rise to unique wines. It is a wine with an intense minerality and an important herbal side, but it shows all the power of the yellow fruit and even a more tropical one. In the mouth it is super textured and showing that it can and should be a wine to be served at the table. Contains sulfites.

The grapes, from our Quinta da Cabreira, in - Douro Superior, were transported in food plastic boxes and subjected to rigorous sorting at the entrance to the cellar. After a complete destemming and a slight crushing, the must was transferred to fermentation vats in stainless steel with controlled temperature. It aged in French oak barrels, where it remained for about 16 months. With a rich ruby color, with an excellent aromatic expression that surprises on the nose for the intense floral notes, well integrated with aromas of ripe wild fruits and fine spice. In the mouth it starts in a harmonious way, evolving into a wine of great seriousness, where we find a compact structure, with fine texture tannins. Finishes elegant and with excellent presence. Poliphonia Reserva White

The grapes from the Monte dos perdigões vineyard were carefully selected, having been vinified separately in French oak barrels. There followed a stage on fine sludge with periodic “batonnage”. Louis Latour Duet White

"Duet" is unique because the two different grapes are harvested at the same time and fermented together. The vines are very far from each other and the last week of Chardonnay harvest coincides with the first week of Viognier harvest, thus preserving the acidity of the Viognier. This results in a balanced wine, in which none of the varieties outweighs the other. It is a fine, smooth and elegant wine. Traditional fermentation in stainless steel vats, controlled temperature with complete malolactic fermentation. Aging for 8 to 10 months in stainless steel vats. Features a bright and beautiful color with golden tones, "Duet" offers subtle peach yellow touches on the nose.
