The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% were introduced into the vat with crushing and 70% in whole bunches, which allowed the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. It was then aged for 75% in used 4-year-old barrels of 400L and 225L of French oak, where it remained for 12 months, with the remaining part of the batch aged in stainless steel vats. of wild fruits, in a typical Douro region with a fine cut, slightly spicy and fresh.
