In the nose it is rich, complex, insinuating notes of quince, cream of cassis, dried fruits and a notorious and charming toast. Harvest in the 3rd week of October, in dry and hot weather - 35ºC. Balanced maturing, vintage with two choices. Fermentation in open winemaking with 20% of stink and steps on foot. 22 months of stage in new and used barrels of 400 and 700 liters. Full and opulent, perfumed with spicy notes, clay, red and black fruit, very complex, austere and elegant. Powerful but with velvety texture, very fresh acidity, long, seductive, but always serious and reserved.

Excellent aromatic presence, with hazelnut notes, and others that resemble toasted bread, baked apple. A wine that, as the name suggests, is part of its personal estate, kept since it was established in the production of wines with a trademark registered in 1991. The Kompassus Baga Private Collection 1991 is unique for the rare quality and quantity, and for this reason is released annually in limited quantities of 25 bottles. It is a commemorative edition and belongs to a Super Premium category. Made exclusively from the Baga variety, it was fermented in an open winery with sugar and aged in a 3000 liter tonl for a year and a half. In spite of his joyful 25 years, we still have a wine of intense color, very fine in the aroma and of great complexity of mouth. He shows himself to be the master of a great youth, full of strength and great refinement. In order to ensure the preservation of its quality for a quarter of a century, we only replace the cork so that it can be drunk and enjoyed without any embarrassment. The grapes that make up this wine were destemmed and fermented in an open press with manual treading. Malolactic fermentation and prolonged aging of 20 months in new (70%) and used barrels, both French oak. Wine naturally stabilized during prolonged aging in barrel. 1400 bottles were produced. Complex and well-defined aroma, with notes of ripe cherry, blueberry and light floral traces. Cedar, forest floor, tobacco box and spice add aromatic complexity. Lightly pressed grapes with whole bunch. The resulting must was fermented in used barrels, followed by regular batonnage until the date of bottling. Tartaric and protein stabilization achieved naturally during an extended 10-month aging in a barrel. 1440 bottles were produced. Aromas of red, floral fruit. Suggestions of vanilla, brioche and spice add aromatic complexity. In the mouth it shows to be an elegant wine, full of minerality and freshness, reflecting well the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine. From the robustness of the classic Bairradino wines of the 90's, a lot with ideal physicochemical and organoleptic characteristics was selected under the Baga grape empire. The wine's youthfulness was taken advantage of and a carefully crafted distillation was started in discontinuous copper stills to allow the millennial chemical connection between copper and distillation. Old beds of national oak and Allier barrels of various types of grain and toast were selected as a resting bed, which were in a long stage of over 20 years in the family's old cellar. Here he was taking care of all necessary operations so that in the end with which conductor, everything mirrored perfection.
