From this differentiation, a wine was created based on the best behavior of the grape variety in the wine year. In the case of Casa da Passarella Enxertia Jaen, fermentation took place in a cement vat with spontaneous fermentation. 12 months in barrel and 18 months in bottle. The entire stabilization process resulted from mininmalist and natural processes. It is an opaque red wine, spicy notes of black pepper with vegetables. It presents a great balance with easy tannins of great smoothness. Long aftertaste. Contains sulfites.

Casa da Passarella Abanico Reserva Red

Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way – we do not subject this wine to any type of filtration.

From the balance of more mature vineyards with more fresh vineyards, is born Casa da Passarella A Descoberta WIne Red. Coming from the Dão region, this wine is based on the traditional varieties Tinta Roriz, Alfrocheiro, Jaen and Touriga Nacional. The winemaking takes place in a winery, where we intend to express the added value of our terroir. In this sense, one of the measures we take are the fermentations that occur with the selected yeast in our vineyards, a tradition of the house that dates back several decades. The stage is made in traditional cement tanks, and a small percentage in used barrels. Contains Sulfites.

Vinification in open beak, fermentation with controlled temperature. Coming from the Dão region, Casa da Passarella A Descoberta Rosé is an intense pink wine with exotic fruit aromas (passion fruit, mango), combined with cherry touches. Fresh, balanced with a vibrant acidity. End of mouth long and refreshing.

Fermentation takes place in a traditional cement vat and pre- and post-fermentative maceration is carried out. Aging for 9 months in French oak barrels of 600 Lts. Citrus aroma with notes of white fruits. It is full-bodied, fresh and elegant with a long finish. Contains sulfites.
