Casa da Passarellla O Enólogo – Vinhas Velhas 3x Red

Dão wine, Casa da Passarella O Énologo – Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir – with a minimalist wine in our cellar. Vinification in a cement vat with pre- and post-fermentative maceration. Aging for 18 months in oak barrels. It presents an opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant with a long and persistent finish. Contains sulfites.

Villa Oliveira 1ª Edição White

Being the first brand created by Casa da Passarella, Villa Oliveria was originally born over 100 years ago. In order to pay homage to our history, these limited editions were created. It is born from manually harvested grapes, with skin fermentation in tanning and in a cement vat with indigenous yeasts. The pressing is done in the middle of the fermentation with passage of the must to oak barrels (1/3 new barrels, 2/3 used barrels), where the fermentation ends and is aged for 9 months (with 3 months of battonage). Citrus color, with an aroma of white fruits, lychees and floral notes. Full-bodied, fresh and elegant. Long aftertaste. Edition limited to 2000 bottles. .

Villa Oliveira 2ª Edição White

Villa Oliveira, from Casa da Passarella, is the result of a batch of five harvests of the Encruzado grape, from 2015 to 2019. It contains sulfites.

Villa Oliveira Vinha do Províncio White

The first brand created by Casa da Passarella, Villa Oliveira was originally born more than 100 years ago. As a true tribute to our history, we have decided to produce extremely limited editions. Villa Oliveira Provincial vineyard is born from the natural blend of grapes from a specific old vineyard, and yet only from a very specific area of that same plot. It is born from grapes harvested manually, and the beginning of the fermentation occurs with the contact with the skin of the grape, in cement tanks with indigenous yeasts. This wine also revisits the traditional processes of white winemaking in Casa da Passarella – in tanning, similar to red wines. An in-depth historical investigation reinforces our conviction in the recovery of the old methods of vinification of Dão. The results are now in sight. Contains Sulfites.

Quinta da Pellada Pape Red

The “Premium” line of Quinta da Pellada wines has long been an icon of Dão wines. For Álvaro Castro, the viticulture and the characteristics of each year are that shape each harvest, however, dedication and alertness are essential so that nature can be “protected”, in order to exercise the minimum of human intervention in the elaboration of each one of their wines. This field blend, which joins castes from Quinta da Pellada and Casa da Passarella, has been staging for 14 months in allier oak casks. Intense ruby color, very concentrated in the aroma, modern and vigorous style. In the mouth, compote and game notes in which the final toasted notes leave a pleasant memory. Tannins fine and of good quality, everything very well proportioned, giving it a great complexity. Contains Sulfites.
