The grapes were manually harvested into 25kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. After fermentation starts, the must was transferred to 500L barrels. The wine was kept in contact with fine lees. Aging for 8 months in barrels with battonage. The nose shows white fruit involved in light, very discreet smoky notes. The palate is unctuous, balanced and with a good acidity that gives it a fresh and prolonged finish. Contains sulfites.

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.

On the nose it presents aromas of ripe red and black fruits, then adding a fresh and fragrant floral, well-integrated notes of barrel aging, fresh balsamic, cigar box and a light touch of mint from the stream at the end. Mouth full of strength, vigorous, with acidity at the balance point, slightly drying the palate, revealing structure and volume, present tannin, without imposing itself on the fresh and juicy fruit, with amplitude, showing once again the good integration of the notes coming from the barrel aging and long aftertaste.
