Manual harvest. Manual choice of curls. Destemming and slight crushing of the berries. The grapes were fermented in granite vats with foot treading, stainless steel vats and new 500l French oak barrels. Each of these types of fermentation gives the wine a particular style. After aging for 19 months in barrels, we form the batch and carry out a light gluing prior to bottling. The wine rested for 1 year before being marketed. Deep ruby color, aroma Intense, complex and deep, developing in layers. Red fruits, bushy notes and spices. Soft attack, full-bodied, burst of fruit. It shows all its splendor in the mouth. Excellent texture, present but very fine tannins. Very long finish. Very gastronomic profile. Contains sulfites.
José de Sousa Red

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Contains Sulfites.
Crasto Superior White

The grapes, coming from the Douro Superior, were transported in 22 kg boxes and subjected to rigorous sorting at the entrance to the winery. They were later de-stemmed and pressed. The pressed must was transferred to a stainless steel tank where it was kept at a temperature of 8ºC for 48 hours until it was decanted. Afterwards, the alcoholic fermentation started in a stainless steel tank and later the wine was transferred to French oak barrels where the fermentation ended at a temperature of 14ºC for a period of 45 days. Crasto Superior aged in French oak barrels, where it remained for 6 months, in the process of working fine lees “bâtonnage”, with the barrels resting on a rotating system that allows the lees to be lifted without incorporating oxygen. It has a pale lemon color, has an excellent freshness and minerality on the nose, well integrated with fresh citrus fruit notes. Evolves in the mouth in a captivating way to a wine of great seriousness, with a vibrant acidity and great volume, very fresh and mineral. A wine with a gastronomic profile that ends up seductive and with enormous persistence. Contains sulfites.
