Manual harvest. Grapes transported in pallets. Maceration in small mills at a temperature between 24 and 26ºC. Use of gravity techniques for grape movement. Aging for 22 months in new French oak casks. This is the first wine from the old vineyard plot (M7) of Quinta dos Muros. The wine that determined that this parcel should be preserved. It is the result of 27 varieties, and a lot of care and passion throughout the process. A red that deserves attention when you have it in the glass. Contains sulfites.

The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. After gentle destemming and pressing, the grapes were transported by gravity to small stainless steel vats with temperature control, where they were vinified, caste to caste. The alcoholic fermentation occurred for about 8 days at an average temperature of about 27 ° C. 40% of the wine aged for 6 months in used French oak barrels of 225 liters, with the rest staged in stainless steel vats. After stage it was subjected to a light glue and filtration before bottling and was bottled without stabilization treatment by cold, which can cause the formation of deposit during its aging in bottle. Intense ruby ??color with violet tint. Aroma with presence of ripe red fruits, floral notes typical of Touriga Nacional. Balsamic character with fresh menthol notes. Mouth with excellent volume and integrated structure, very balanced acidity in a harmonious and long finish. Contains Sulfites.

In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

Flor de São José Reserva Magnum White

Grapes harvested by grape varieties and plots in boxes of 20 kg and placed in the cold at 5-6º C. After being fully destemmed they are crushed. The must was subtly pressed and decanted until it reached the necessary clarity. Fermentation and subsequent full aging in 500 liter barrels, 60% new and 40% used. The lees were removed every month to keep them in suspension. After eight months, the final blend was made and the wine was pasted before being bottled. With a citrus color, the wine is initially very discreet and complex with mineral notes evolving later to some fresh and floral notes, more discreet and elegant. In the mouth it is fresh, with a present acidity and very balanced. Fine, complex and very elegant, it shows an excellent balance between alcohol, fruit and acidity, and a lively, fine and quite long finish. Contains sulfites.
