Manual harvest with careful selection of bunches, followed by fermentation in new 500 liters French oak barrels. After 6 months of aging with "battonage" on fine lees, the result is a fresh, structured and unctuous white wine.
Greenish-yellow in color, clear and bright, it reveals fresh aromas of citrus peel wrapped in green and spicy notes, on a complex background of field herbs and wild flowers. In the mouth, it is dry, with refined acidity, highlighting touches of orange, white plum and subtle dried fruit, such as macadamia. An intriguing and endless Alentejo white.
Torre de Palma Arinto Alvarinho White

The grapes were harvested manually and transported in small boxes to the cellar where they were stored in a cold chamber at 3°C for 24 hours. They were then selected and gently pressed. The must was cold decanted (10°C) and then fermented in used French oak barrels from Burgundy. After alcoholic fermentation, the wine aged for 6 months in the same barrels with battonage and sur lie. Crystalline wine with green tones, complex and elegant aroma with notes of green apple, lime and wet stone. Flavor rich in fruit, dry and mineral. Excellent acidity.
QUINTA DAS MAIAS Barcelo White

The grapes are crushed with partial destemming, followed by light automatic pressing. The must was managed by gravity and decanting, fermentation took place at temperatures between 16 and 18 ºC. After fermentation, the wine was set on lees with a nitrogen-based bâtonnage. The wine was stabilized by cooling and light filtration before bottling. Golden color, balanced with good fullness. There are notes of white pear, butter, underripe yellow plums, lemon blossom, chamomile flowers and a nice aftertaste of camphor. Contains sulfites.

This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant. Long aftertaste. Contains sulfites.
Quinta da Carolina Reserva Especial 2011 Red

The grapes were harvested in 25kg plastic boxes, hand-picked from berry to berry, destemmed and trampled on foot in traditional presses, fermented in presses for a week at a temperature of 26ºC. Malolactic fermentation took place in new French oak casks, where the wine aged for 18 months. Dark ruby color. Fresh notes of black fruits on the nose without over-ripening, all well matched and balanced with new wood, good volume in the mouth with a refreshing acidity to balance the concentration of the wine, the tannins are present but ripe. Long and elegant finish with notes of vanilla and fruit. Contains sulfites.

Destemming, thermal shock, skin maceration, pressing, static decanting of the must, fermentation at controlled temperatures: 70% in stainless steel vats and 30% in new American and French oak barrels. Aging for 6 months in stainless steel vats and in new oak barrels, on fine lees. Crystalline appearance, straw color with greenish reflections. Grapefruit and apricot notes, notes of mint green complemented with white pepper and nutmeg. Elegant and harmonious on the palate, balanced between fruit and spices. An intense and persistent finish. Cabeço de Mocho Great Selection is the result of the excellent combination of the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta das Camélias. Features a deep ruby color with red nuances. The aroma is very complex and delicate, showing mature notes of cherry and black aroma, harmonized with expressions of fresh vanilla and a slight nuance to cloves. In the mouth it is a full and round, well muscled with the presence of educated tannins. Demonstrates finesse, exquisite bouquet and a long persistence. Should be served at 16-18ºC, accompanied with dishes of red meats and strong cheeses. Fermentation with controlled temperature up to 28ºC for 8 days. Stage 6 months in French oak and American toast medium. Contains Sulfites.
