Manual harvest and then transported in pallets. Partial fermentation in stainless steel vats, finished in old oak casks. Stage in the same hulls for 20 months. The bright yellow hue immediately catches the eye! It presents an aromatic complexity where there is a mix of floral, with dominance of white flowers, and ripe fruity yellow pulp and dehydrated fruit. In the mouth the notes of toasted wood take to another dimension, warmer and more complex, always accompanied with a beautiful acidity and surrounding volume. Final with an intoxicating freshness! A part of the lot comes from the Alto and Meio plots, from the old vineyard (70 years old) of Quinta da Pellada, where there is a great genetic heritage, with no predominance of any variety. The wine Quinta da Pellada Muleta is the result of the effort to conserve the genetic heritage that exists in the Dão region. Ruby color of good concentration. The aroma is very elegant, slightly floral, with notes of wild fruit and some menthol. In the mouth, it is alive, and with acidity. Fresh fruit and spicy flavors are involved in a refreshing mineral profile. It presents a good volume of mouth, without being heavy, offering a perfumed, long and very balanced finish. An intense, elegant wine with volume. Beginning at the end of August, this harvest was the earliest ever harvested in Soalheiro, but it demonstrated an exceptional balance between the fruit and the acidity of the Alvarinhos of the unique terroir of Monção and Melgaço. Alvarinho grapes without late harvest were harvested in small capacity boxes and transported to the winery in a short period of time. The must obtained by pressing the whole grapes was decanted and fermented at low temperature. The fermentation took place in stainless steel until reaching the balance of sweetness and acidity intended and that dictated the final alcohol of this Soalheiro - 9%. Citrus and tropical notes of the Alvarinho variety with a balance of unusual acidity and sweetness.
