Manual harvest and then transported in pallets. Partial fermentation in stainless steel vats, finished in old oak casks. Stage in the same hulls for 20 months. The bright yellow hue immediately catches the eye! It presents an aromatic complexity where there is a mix of floral, with dominance of white flowers, and ripe fruity yellow pulp and dehydrated fruit. In the mouth the notes of toasted wood take to another dimension, warmer and more complex, always accompanied with a beautiful acidity and surrounding volume. Final with an intoxicating freshness! Good evolution in bottle. Contains sulfites.

The maturation phase occurred later, due to lack of water in the soil and heat. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. After rigorous selection in the cellar, the grapes were pressed with the entire bunch, at low pressure. Part of the batch was fermented and aged in stainless steel vats for 8 months, and the rest in French oak barrels. Pale yellow in color, it has a fresh and complex aroma. Mineral character, which gives it freshness, together with citrus and floral notes, with a slight aroma of smoke. Frank in the mouth is mineral, enveloping with acidity tempered by the light greasiness provided by the partial malolactic produced in barrels. Contains sulfites.

Aged for 5 months on fine lees and battonage. It is shiny with a salmon color. The aroma is delicate, with hints of wild fruit, lemon zest and a slight floral note. Balanced, dry and persistent body. Aggressive maceration, in order to extract the maximum amount of natural antioxidant compounds and other phenolic compounds at 22ºC. In the mouth it is fresh, full-bodied with a slight chocolate character and a rare finish. Primary aromas of black cherries and wild fruits typical of the variety. This wine accompanies meats, cheeses and Mediterranean cuisine in general. Decant before consuming. Serve between 15 and 16ºC.
