Gentle pressing of both varieties together with static decantation at low temperature for 24 hours. 60% of the fermentation batch in stainless steel vats at controlled temperature and stage with gentle stirring of lees for 6 months in stainless steel vats, 40% of the fermentation batch in 500 liter French oak barrels (2nd year) with smooth batonnage. It presents a straw color, aromatically discreet, fresh. The fruit is smooth, citrus notes and the presence of dry notes. In the mouth alive, dry, balanced acidity, good volume and full. The intensity of flavors is dominated by fruit, freshness and minerality. Contains Sulfites.

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden on foot and destemmed by hand on a table called "table of ripanço". Afterwards, a small part of the must, the films and the stench are fermented in the clay pots, and another in the wine press. The remainder of the brand is fermented in stainless steel vats. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months in French and American oak casks. Red color loaded with scented dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, tannins present but soft. Long end of test. Contains Sulfites.

Fermentation takes place in new 550 liter French oak barrels in a temperature-controlled cellar at 18ºC. About 6 months in French oak barrels, on the lees of fermentation accompanied by batonnage, to provide the integration between the wood and the wine, increasing its creaminess and depth. After filling, it remained in the bottle for 6 months, during which it had a controlled maturation that promoted the characteristic complexity of this wine.
