100% of this wine is aged in wood for 10 months, in 25% new wood. Fermented in conical stainless steel vats for 7 days, with temperature control, after which malolactic fermentation takes place. This Syrah wine reveals notes of fresh black plum with nuances of ripe blue fruit on a relatively intense palate, with a markedly mineral backbone in a set full of spices. Contains sulfites.

Manual harvest, during the month of September. The grapes were received at the winery, in the special line, with total destemming and manual selection of bunches and later “berry by berry” by an optical sorting machine. Fermentation was carried out in a press, with pre-fermentation maceration and temperature control. Internship for 18 months. This wine shows a violet color and a smooth and fruity aromatic profile. It is a complex wine on the palate, deep but delicate. The aromas of ripe fruit that can be felt in the nose also appear with subtlety in the mouth and linger at the end of the tasting. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Produced from the carefully selected vine varieties, Alicante Bouschet eTincadeira, planted in the older vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration. This wine aged for 15 months in new French oak barrels and 12 months in the bottle. Contains Sulfites.

Ribeiro Santo Vinha da Neve Red presents a complex aroma, with notes of dark fruits and aromas of forest flowers, mineral and spicy. In the mouth it is textured, with noble tannins in gifts, powerful and with a well integrated acidity and a long end. The harvest took place in the third week of September. The grapes were harvested manually, for small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard, followed by a second choice at the entrance of the winery. The grapes were completely destemmed for a small granite mill, where they macerated two days at low temperature, before beginning the alcoholic fermentation, with indigenous yeasts, under controlled temperature. The alcoholic fermentation lasted about 3 weeks, with slight homogenization by walking. Once the fermentation was finished, it was decanted into new French oak barrels where it remained for 12 months. After the bottling and before leaving to the market, it staged a minimum of 6 months in fresh basement.
