Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

The grapes were harvested manually, transported in 35 kg boxes and selected on a sorting table. Destemming without crushing followed by pressing. Decantation after 24 hours, and fermentation in stainless steel between 14-16ºC. Stage on lees for 6 months. Open ruby-pink color. Intense nose, notes of crushed fresh strawberry, some vegetable. Fresh, crunchy attack, present acidity, with excellent salinity. Great persistence.

Fermentation the temperature controlled at 20/200ºC. Citrine color with greenish laves. Very fruity aroma with tropical aromas. The aromas are confirmed in the mouth, with intensity and good acidity. The fermentation was carried out in stainless steel, with 25% of stalks and the period of contact between the solid and liquid part, lasted for 5 weeks, in a delicate process, with a very light maceration with little extraction. Turris aged for 20 months in two 1,000-liter kites, over 60 years old. The wine was bottled without glue or filtration. The young and intense color, slightly open, leads to a deep, markedly mineral and crystalline aroma. Impresses by purity and finesse, with red, fresh fruit, and a spring floral. In the mouth it is fresh, silky but with great tension. The combined elegance of minerality and tannic structure shows a unique complexity. This wine particularly prizes for the long finish, a wine that is "chewed" without being heavy and that allows us to taste the old. Contains Sulfites.
