Alvarinho grapes are harvested manually from a selection of grapes from our vineyards in Quinta de Soalheiro, produced according to the concepts of organic farming where we protect the wine ecosystem, promoting biodiversity and environmental sustainability. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation and stage in (new and used barrels), remaining in the fine lees with periodic batonnage until the end of June. The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. Fermentation takes place in a stainless steel tank at a low temperature and in two egg-shaped deposits in our innovation area, one stainless steel and the other cement, so that the final batch, due to the constant battonage in the fine lees, transmits complexity and taste persistence superior to what we normally find in this variety. Bright lemon yellow color, elegant aroma marked by mineral and floral notes.
