Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Vinification of Syrah and Touriga Franca in open presses with automatic treading and high extraction work. Alicante Bouschet vinification in stainless steel vats at lower temperatures (26ºC). The aim is to extract the structure of Syrah, the sharp tannins of Touriga Franca and the freshness, exuberance of fruit and elegance of Alicante Bouschet. The batch spent 8 months in new French oak barrels. Encantado shows all the vitality of Touriga Franca that serves as a great base for this wine. The angular and present tannins, the ripe fruit in balance with the aromas of the forest it presents, make it a table companion. The barrel present, but without helping the one-dimensionality of the set, makes this wine a wine with layers that rise throughout the tasting. Contains sulfites.
Carm Reserva White

With the most modern technology and total temperature control we eliminated curls that were not in perfect condition, the grapes were vinified with total destemming, followed by soft crushing and skin maceration for about 12 hours. After this period over an inert atmosphere the press was pressed in a penumatic press, followed by a period of clarification of the must of 24 to 48 hours depending on the variety and maturity stage. Vinification in hyper-reduction, fermentation at 12ºC and transfer under controlled atmosphere. The wines were sucessively stamped in stainless steel and French oak barrels on bottonage until bottling. Contains Sulfites.
