Manual harvesting, for boxes of 20kg, with rigorous selection in the cellar. Vinification in stainless steel mills, small capacity, with temperature control. Stage for 16 months in French oak barrels, of which 30% are new barrels and 70% barrels used. Very dark red color, almost black. The notes of ripe fruit and intense, although without any excess of maturation, which adds tobacco, graphite and a mineral background, are accompanied by a slight vegetal suggestion that adds to them an unusual complexity and tension. Vivid and powerful, austere but delicate, it surprises by the lively yet serene tannins, ending fresh and vigorous thanks to a well integrated acidity. Contains Sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to a pneumatic press. After clarifying the must, alcoholic fermentation began in stainless steel tanks at low temperatures of around 12ºC, in order to preserve all the varietal character of the variety. Alcoholic fermentation took place for approximately 20 days, where the different components then staged for 8 months. It is a light salmon colored wine. In the aroma, it presents notes of very fresh red fruit, such as strawberry, fresh cherry, light currant and floral. In the mouth it is slightly structured with a lot of freshness to balance the entire tasting.

Manual harvest at the optimum point of maturation, crushing and soft destemming. Fermentation in stainless steel vats for 8 days at 22-24ºC. Malolactic fermentation and stage in French oak 500L for 15 months. Slight filtration before bottling. Ruby red color, Delicate aromas of fresh strawberry and raspberry fruits, notes of red and still balsamic pepper to pine, Soft, fresh, fruity and balsamico attack. Acidity balanced. Clean and bright pale yellow color, the aroma is intense with field flowers, with citrus notes, finished with great minerality. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Produced from the carefully selected vine varieties, Alicante Bouschet eTincadeira, planted in the older vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration. This wine aged for 15 months in new French oak barrels and 12 months in the bottle. Contains Sulfites.

The grapes were harvested by hand and transported to the cellar in 20 kg boxes. They were vinified in mills with treading on foot. Fermentation took place over 6 days in the mill with indigenous yeasts. This followed an 18-month stage in 600 liter kites. Intense ruby color, we bring the nose closer to the glass and the aroma is gradually discovered. First, the cistus, juniper, stands out, progressing to a universe of freshness seasoned by aromatic herbs. It is then alive and full of fruit. In the mouth it attacks with volume, a soft sphere surrounded by soft tannins slides for a long and fresh finish. Contains sulfites.
