The grapes were harvested manually and transported in small boxes to the cellar where they were stored in a cold chamber at 3°C for 24 hours. They were then selected and gently pressed. The must was cold decanted (10°C) and then fermented in French oak barrels. After alcoholic fermentation, the wine aged for 6 months in barrels with battonage and sur lie. Crystalline wine, with greenish yellow tones, fruity aroma with notes of yellow plum and pineapple. In the mouth, it has an excellent volume, dense but with good refreshing acidity.

Classic vinification in stainless steel vats with smooth skin maceration. Fermentation with controlled temperature up to 26 º C. Maceration cared for 5 days. Aged for 8 months in French oak. Clear appearance. red color with hints of garnet, reveals notes of red fruit with hints of raspberry, light blueberry, complexed with nuances of cinnamon and cloves, flanked by fresh vanilla expressions. It presents a very elegant and balanced body, with velvety and round tannins, with good expression of balsamic and pine notes. Spontaneous fermentation, obviously with indigenous yeasts, took place in a stainless steel mill, followed by a 36-month stage in three 400L oak casks, second/third use. Direct gravity bottling. This wine is the result of an attempt to recreate the Pelada 2003, in which, at the time, it was intended to demonstrate the elegant and balanced character of Dão wines. A part of the lot comes from the Alto and Meio plots, from the old vineyard (70 years old) of Quinta da Pellada, where there is a great genetic heritage, with no predominance of any variety. The other part of the lot comes from Touriga Nacional from plot 5 of Quinta da Pellada. Contains sulfites.
