Manual harvest at the optimum point of maturation, crushing and soft destemming. Fermentation in stainless steel vats for 8 days at 22-24ºC. Malolactic fermentation and stage in French oak 500L for 15 months. Slight filtration before bottling. Ruby red color, Delicate aromas of fresh strawberry and raspberry fruits, notes of red and still balsamic pepper to pine, Soft, fresh, fruity and balsamico attack. Acidity balanced. Manual harvest in 12kg boxes. After selection on a mat of choice, the grapes were subjected to a peculiar cold maceration. Fermentation took place in small stainless steel vats at a temperature of 14ºC for 18 days. Aged in bottle for a period of two months. Pale pink color. Minerality and notes of red fruit. Good volume in the mouth and pronounced freshness. Contains sulfites.
Casa da Passarella Abanico Reserva Red

Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration.
