The harvest is done by hand in small boxes to preserve the integrity of the Bical. The grapes are then gently pressed to respect the fruit. Only native yeasts are used. The must is pressed directly into our traditional barrels to be fermented. The maturation lasts for about 12 months on fine lees without batonnage and the blend is made in a tank for another 4 months. Throughout the aging process, our absolute priority is given to the true expression of the terroir and character of the vintage. It has not undergone any gluing or filtration. “Tola” is a precise wine and reveals the typical limestone character of Bairrada. It has a bright pale yellow color. On the nose, the wine opens up deeply, intense and elegant aromas emerge: floral notes of white flowers, peach blossom, pear, honey, grilled almonds, sometimes even exotic woods. On the palate, the texture is silky and dominated by a harmony of contours that never transmit any weight. The aftertaste is exceptionally persistent with smoky hints and enhances the fineness of the set with a persistent acidity. This is a mineral wine suitable for refined cuisine. Contains sulfites.
