After being selected, the grapes are stalked at the entrance of the cellar, crushed and driven to stainless steel mills with robotized steps. It is at this stage that the pre-fermentative maceration is carried out at low temperatures. Subsequently the fermentation is carried out in stainless steel tanks at a maximum controlled temperature of 28ºC. Intense deep red color with violet tones. Intense, fresh and complex aroma, dominated by ripe fruits such as blackberry, plum and cassis, some floral aromas, such as violets, and tertiary aromas from its “elevage” in barrels like spices. It has firm tannins, ripe and smooth and a balanced acidity. Contains Sulfites.

Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. Using a minimalist winemaking approach, inspired by ancient techniques dating back to Roman times, the farm produces distinctive wines known for their notable acidity, ripe fruit and robust tannins. Manual harvest for 12 kg boxes. Manual selection on a vibrating sorting table, followed by destemming and light crushing. Cold pre-fermentation maceration for 48 hours. Alcoholic fermentation takes place in temperature-controlled stainless steel vats. After pressing, the wine is transferred to 500L French oak barrels, where it undergoes malolactic fermentation and ages for another 10 months. Deep ruby color. Aroma dominated by fruit, ripe cherry and fresh plum, in perfect balance with light toasted notes from aging in wood. The fine, well-polished tannins give rise to a structured and velvety mouthfeel, marked by elegance. Long and juicy finish.

Manual harvest, during the month of September for 25 kg boxes. After a selection of bunches in the vineyard, the berries were chosen by optical sorting, choosing the perfect berries. These were then refrigerated, de-stemmed and pressed in an inert environment. The subsequent decantation and fermentation took place at a temperature of 16°C. This single variety has a very fresh character, with a pale and crystalline appearance. Very lively on the nose, reveals expressive fruit with a floral touch. On the palate it is a balanced wine, with good volume, assertive acidity and minerality. Contains sulfites.
