Manual harvest. Total destemming. Fermentation in open barrels at low temperatures. Decanting into new and used 225L French oak barrels for 18 months. Aged for 12 months in bottle before going to the market. Each of the cousins chose their favorite barrel to create the blend that best characterizes them. Concentrated ruby color. Deep and elegant aroma. Spicy notes, black fruit and chocolate. In the mouth great acidity and structure. Noble tannins, good texture and great balance. Long and dense finish. It will age beautifully in the bottle. Contains sulfites.

White produced from traditional Alentejo grape varieties: Arinto, Alicante White and old blended vines, with minimal intervention, without the addition of sulfur dioxide until the end of fermentation and spontaneous fermentation in barrels and long aging on lees. After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it is very complex, between notes of wild fruit, “sous-bois”, black fruit and balsamic freshness. In the mouth, it presents very fine and polished tannins that provide structure and finesse at the same time.

Manual harvest for small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with controlled temperature around 16ºC, using very gentle crushing and pressing processes under an inert atmosphere in order to preserve all the aromatic potential of the grapes , a great effort is made so that all pre-fermentative operations are carried out within the strictest rigor, as they are responsible for the intrinsic quality of the future wine. Part of the wine ferment in used French oak and remains there after a small racking over fine lees with periodic “battonage” stirring until the final blend is made with stainless steel wine. Fermentation and aging in French and American wood with agitation of lees for 6 months until filling. Complex aroma, mineral in balance with exotic fruits, citrus fruits, white flowers of the field, in addition to discreet and suggestive toasted barrel notes.
