Hand-picked grapes, reception with total destemming and crushing immediately. Fermentation between 22-26ºC for 7 days with gentle maceration. Aging for 12 months in new French oak 1/3 and American 2/3 oak barrels. Very complex aroma where the notes of barrel harmoniously combine that add complexity to spices, black fruits, licorice and violets in a set that promises to improve in bottle year after year. Complexity, very concentrated aroma, vigorous and structured in the mouth with a thick texture. Contains sulfites.

Quinta do Fojo, located on the picturesque left bank of the Pinhão Valley, is the birthplace of the exceptional Quinta do Fojo Red 2017. This wine is produced exclusively from the property's vineyards, which extend over 4 hectares planted in 1986, with a mix of grape varieties where Tinta Roriz predominates.
The Mediterranean climate, combined with the schist soil and the altitude between 250m and 370m, provides the ideal conditions for the production of superior quality wine. Manual harvest for small perforated boxes of 20 kg, soft pressing of the whole bunches without destemming, in order to preserve the integrity of the grapes as much as possible, natural fermentation with indigenous yeasts at a controlled temperature between 16-18ºC in order to obtain the maximum expression of the combination of caste, soil and climate. After alcoholic fermentation, the wine was in contact with the fine lees, having been raised and stirred for about a month in stainless steel vats in order to gain creaminess and volume in the mouth. After bottling, the wine aged in bottle for 3 months before being placed on the market. It presents an intense aroma, of mineral character in balance with floral notes of roses and violets in harmony with aromas of tangerine and grapefruit peel. Acidity and freshness with fruit dominate the palate, very long and creamy with very fresh acidity. Contains sulfites.

Manual harvest, during the month of September for 25 kg boxes. After a selection of bunches in the vineyard, the berries were chosen by optical sorting at the entrance of the winery, in order to take advantage of only the perfect berries. These were then refrigerated, de-stemmed and pressed in an inert environment. The subsequent cold decantation and fermentation took place at a temperature of 16°C. This single variety has a very elegant profile and citrine color. On the nose, the aromas of stone fruits and flowers stand out. In proof, it shows balanced acidity, fruity taste, finishing in a consistent and delicate way. Contains sulfites.

This wine is obtained from organic viticulture. Manual harvesting. Transport of grapes in small boxes to avoid crushing. Manual selection of curls. Total destemming followed by gentle pressing. Slight maceration of the skin. Spontaneous fermentation in stainless steel tank. Stage in fine lees until January. Peach skin color. Aroma intense and full of character where the fresh red fruits (currant) and a tropical subtle stand out. In the mouth it is dry, excellent texture and refreshing finish. Ideal for dining and other outdoor moments, by the sea and always in good company.
