After careful selection of the grapes and harvest at the ideal point of maturation, the base wine fermented in a stainless steel tank, with controlled temperature, after direct pressing. Aging on fine lees for 6 months with periodic batónnage. Second fermentation in bottle, by the classic method, followed by aging on lees and intermediate batônnages for 19 months, in the cellars of Convento da Cartuxa. Contains sulfites.

Dehydrated grapes followed by skin maceration. Pressing and fermentation in stainless steel. Stage on lees about 4 years. Dégorgement without added sugar - Brut Nature. With Baga and Touriga, it has a beautiful color of onion peel and a very fine, expressive but at the same time delicate aroma, with wild berries. The aromatic delicacy contrasts with the explosive mouth, resulting in a sparkling full of luster and flavor. Contains sulfites.

The grapes of this sparkling wine are obtained from a second vintage of the most suitable vineyards to create Baga grapes for a rosé sparkling wine. It is vinified from open spout, the wort being placed in small decanters of 1m³ where it remains between 24 to 36 hours to make the decanting through natural precipitation. At the end of this process, the wort is transferred to stainless steel tanks where it ferments, with a temperature control made with cooled water drop. It is bottled the year after harvest. It is a sparkling traditional method, fermented in bottle, with the remuage done by hand in wooden desks. Being a natural brute, it has no added sugar in the expedition liqueur. Contains sulfites.

The very fine bubble and the delicate mousse give this sparkling wine a lot of creaminess, revealing a delicate and distinct finish. A "blanc de noir" from the Baga variety born and raised in Bairrada. Another challenge with the São Domingos style and a variety of unique taste that is intended to inspire new directions. Hand-picked grapes and the usual rigor of bottle fermentation lead us to believe that this is a case of success. Contains sulfites.
