Favaios 1980 is the type of wine that is only made in years when the grapes have shown exceptional quality. After careful selection of the best grapes from Favaios, they were macerated and fermented as was traditional in the region. The alcoholic fermentation is very short, and as soon as the cap rises, most of the must is drawn off and spirit is added. However, a small part of the must continues to ferment and macerate with the skins for a few more days, and only later is spirit added to this very aromatically rich must. The first and second spirit-enriched musts are then blended and stored in very old wooden barrels, ageing slowly over decades, refining its bouquet. It has a very intense aroma, still preserving some citrus notes. Rich in typical ageing aromas such as walnut, dried figs, toasted notes, and cocoa. On the palate, it is full-bodied but delicate, with sweetness well balanced by acidity, fresh and elegant. Contains sulfites.
