It should be served between 8ºC and 10ºC, being ideal to accompany roasts, red meat, suckling pig, cheeses and oysters. This superior quality sparkling wine comes from Alvarinho grapes harvested on a small plot, located at an altitude of between 300 and 350 meters, aged close to 20 years, protected from north winds and on granite soils. providing the development of small berries, with a thick skin and slow maturation, in order to preserve all the aromatic complexity of the grape. These grapes are harvested earlier so that the total acidity is higher and its probable level is no more than 11.7%, resulting in a fresh, light sparkling wine, with fine and persistent bubbles.
