Vinified from grapes from selected plots. After maturation tests, the grapes were harvested at their optimum ripeness point. After total stemming and gentle crushing, maceration and fermentation took place, with pumping over in stainless steel vats at a controlled temperature of 28ºC, for around 12 days. We thus obtained intense, elegant wines with an expression of the place. After malolactic fermentation, the wines aged in French oak barrels for around 12 months. It was subjected to light filtration before bottling. In order to preserve its quality, it was bottled without cold stabilization treatment, which may cause deposits to form during aging in the bottle. Bright red color. Attractive aroma with notes of currant, black plum and mustard seeds. In the mouth it is fresh, very complete and elegant. It has present and fine tannins, very well integrated. Contains sulfites.

The maturation phase occurred later, due to lack of water in the soil and heat. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. After rigorous selection in the cellar, the grapes were pressed with the entire bunch, at low pressure. Part of the batch was fermented and aged in stainless steel vats for 8 months, and the rest in French oak barrels. Pale yellow in color, it has a fresh and complex aroma. Mineral character, which gives it freshness, together with citrus and floral notes, with a slight aroma of smoke. Frank in the mouth is mineral, enveloping with acidity tempered by the light greasiness provided by the partial malolactic produced in barrels. Contains sulfites.

Encoberta Red

Encoberta is the name of a small town in Penalva do Castelo (Castendo sub-region), where this wine was made with its own grapes. Vineyards aged 28 years at an altitude of 460 m with granite and clay soils are being converted to organic certification since 2020. It ferments with indigenous yeasts in French oak vats and with 35% whole bunch followed by 30 days of cuvaison. Aged for 15 months in used French oak barrels and vats. Naturally stabilized. It is a very characteristic red from Dão, from Penalva do Castelo. A little more fruity, denser and more textured than Serra da Estrela wines, black fruit and spicy notes also in the mouth. The tear must ferments with indigenous yeasts in used 225 L French oak barrels. The wine ages for 11 months “sur lie” without batonnage and another 8 months in stainless steel. Naturally stabilized, it may show turbidity or deposit. A rosé wine with a more concentrated color, onion skin with hints of copper. Delicate aromas of red fruits and fermentation, like brioche.
