Encruzado is an exclusive grape variety of the Dão region, is well balanced, aromatic and produces wines with a great longevity. The vines grow on slopes located between 350 and 400 meters in altitude. These vines fall under an integrated protection program and the application of herbicides is prohibited. Grape harvesting is done by hand, when the ideal point of maturity is reached, around mid-September. The harvest is collected in small boxes of 10 kg. This white wine was fermented in stainless steel at 13 ° C, while two thirds of its fermentation was completed in new French oak barrels, where it aged for 12 months. Quinta de Lemos Dona Paulette Encruzado presents minerality and wood that gives some complexity. It also has resin plants, eucalyptus, mint, nuances of hazelnut and tamarillo. The grapes were harvested manually, for small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard. The grapes were completely destemmed for small stainless mills, where they macerated 24 hours at low temperature, before beginning the alcoholic fermentation, with indigenous yeasts at controlled temperature. The alcoholic fermentation lasted about 15 days, with gentle remonstrances for a good extraction of color and aromas. After fermentation, it was transferred to new French oak barrels, where it remained for 12 months until bottling. Contains Sulfites.
