The grapes are selected on the selection table, destemmed, followed by pre-fermentative maceration. Fermentation takes place in a mill and stainless steel vat with temperature control. After the malolactic fermentation stage, the wine aged for 18 months in new French oak barrels and second year French and American oak barrels. After bottling, it rested in a bottle in our cellar for 20 months. In order to preserve all of its qualities, it has not been stabilized and can naturally create deposits. Clear wine, deep violet red, aromas of plum, cherry, fig, chocolate, spices and floral notes of violet. With a translucent ruby color, Carolina red presents a balanced acidity, aromas of red fruits, candied cherry, with a slight touch of wood and spice. Contains Sulfites.

Quinta da Carolina Red

Careful selection of grapes in whole bunch for the cement mill where they spontaneously ferment at controlled temperature. After a maceration period of about a week, the grapes are picked and the wine continues its fermentative processes in 500 liter French and Austrian oak barrels. Aging for 24 months in French and Austrian oak barrels, followed by a year in stainless steel, where it stabilizes naturally throughout the seasons. Bottled manually, by gravity without filtering or sticking and with minimal SO2 adjustments. It is a wine with a little extracted profile, we look for the elegance and freshness that an old vineyard with exposure to the north can give us. Open ruby color, shallow, with herbal notes combined with fresh fruit on the nose, deep and persistent in the mouth, with Douro and wooden aging notes. A wine to enjoy while young, but clearly aging. Advisable for decanting. Contains Sulfites.

Quinta da Pellada Mulher Nua Red

Spontaneous fermentation, obviously with indigenous yeasts, took place in a stainless steel mill, followed by a 36-month stage in three 400L oak casks, second/third use. Direct gravity bottling. This wine is the result of an attempt to recreate the Pelada 2003, in which, at the time, it was intended to demonstrate the elegant and balanced character of Dão wines. A part of the lot comes from the Alto and Meio plots, from the old vineyard (70 years old) of Quinta da Pellada, where there is a great genetic heritage, with no predominance of any variety. The other part of the lot comes from Touriga Nacional from plot 5 of Quinta da Pellada. Contains sulfites.
