Manual harvest in boxes of 18 kg. After sorting, the grapes are destemmed and slightly crushed. The grapes fall directly into the vat by gravity, without using pumps. Cold pre-maceration until fermentation starts spontaneously. Total maceration about 40 days. Aged for 24 months in French oak, 30% new oak and 70% second and third use French oak.

The grapes were harvested manually and transported to the cellar where they were destemmed. Alcoholic fermentation took place in a stainless steel mill at a temperature of 26–27°C. After finishing, we kept the wine in post-fermentation maceration for 5 days. The malolactic fermentation occurred naturally in a stainless steel tank and then it was transferred to barrels where it remained for 18 months. The lottery followed. Aging for 18 months in barrels and 5 years in bottle. Intense color. Aroma shows great depth and complexity, with lots of pepper and nutmeg, macerated berries and moss. In the mouth, vigorous tannins stand out, but tamed by time and solid structure. Rich and exquisite, with a lot of freshness in the endless finish. Contains sulfites.

Esporão Private Selection Red: Syrah and Aragonez were fermented in small stainless steel mills, with alternating step-by-step with short manual overruns done 2-3 times per day, depending on our daily taste throughout the fermentation. We prefer to ferment the Alicante Bouschet in a small stainless steel tank and we did the reassemblies manually. The reason for this choice is that this caste has a relatively brittle film, which may lead to an exaggerated extraction of tannins. After pressing, we kept the wines separated, in order to better understand the evolution of each one. The malolactic fermentation took place in the barrels and spontaneously. 30% in new barrels and 70% in used barrels (1 year), of 225l French oak barrels (Taransaud; Saury; Boutes). After 18 months of internship, during which we only made a transfer immediately after the malolactic, we made the final lot, which was bottled on May 28, 2014, only with a slight filtration and without any type of bonding. In the nose predominates the black fruit with slight notes of smoke and spices. In the palate it shows density and richness, shows itself balanced, with good acidity and fine tannins. The ending is long and persistent. Contains Sulfites.

After 24 hours of cold maceration, to enrich in aromas, the fermentation took place for 10 days at 24ºc, with “delestage” to facilitate the extraction of color and tannins that contribute to the body and mouth volume. After malolactic fermentation, the wine aged for 24 months in new French oak barrels. Deep red color, aroma marked by ripe fruits such as black plum, black pepper, spices and cocoa. Confirms the black fruits and cocoa well matched with the elegance of French oak. Full-bodied wine with the presence of soft tannins that gives it volume in the mouth and good acidity makes it very balanced. Very pleasant, full-bodied, elegant and very persistent finish. Contains sulfites.
