Granitic soils, altitude, sustainable farming practices and zero herbicides are just the beginning of this unique rosé wine. In Vila Nova de Tazem (Serra da Estrela sub-region) a 28-year-old vine of 100% hand-harvested Tinta Roriz grows. The commitment since 2020 to an option for organic farming in all our vineyards. The tear must ferments with indigenous yeasts in used 225 L French oak barrels. The wine ages for 11 months “sur lie” without batonnage and another 8 months in stainless steel. Naturally stabilized, it may show turbidity or deposit. A rosé wine with a more concentrated color, onion skin with hints of copper. Delicate aromas of red fruits and fermentation, like brioche. In the mouth, it has remarkable acidity and minerality, with touches of spices, especially black pepper. It has a dense yet elegant texture, quite salivating at the end as it calls for food. Extremely gastronomic. Contains sulfites.
José de Sousa Mayor Red

In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

Manual harvest, during the month of September for 25 kg boxes. After a selection of bunches in the vineyard, the berries were chosen by optical sorting at the entrance of the winery, in order to take advantage of only the perfect berries. These were then refrigerated, de-stemmed and pressed in an inert environment. The subsequent cold decantation and fermentation took place at a temperature of 16°C. This single variety has a very elegant profile and citrine color. On the nose, the aromas of stone fruits and flowers stand out. In proof, it shows balanced acidity, fruity taste, finishing in a consistent and delicate way. Contains sulfites.
Vinha d’Ervideira White

Mechanical and night harvest. The process goes from caste to caste. Antão Vaz grapes are destemmed, lightly pressed in a vacuum. After defecation, they ferment at a controlled temperature between 10o and 12oC. Arinto grapes are destemmed and sent, without crushing, to “vinimatics”, for skin maceration between 6 and 10 hours. Subsequently, they are pressed and sent to the cold room. Wine of citrus tones, with notes of tropical fruits, light quince jam and mineral notes. Elegant in the mouth, it shows good acidity and a striking structure, which prolongs the tasting. Contains sulfites.
