Granitic soils, altitude, sustainable farming practices and zero herbicides are just the beginning of this unique rosé wine. In Vila Nova de Tazem (Serra da Estrela sub-region) a 28-year-old vine of 100% hand-harvested Tinta Roriz grows. The commitment since 2020 to an option for organic farming in all our vineyards. The tear must ferments with indigenous yeasts in used 225 L French oak barrels. The wine ages for 11 months “sur lie” without batonnage and another 8 months in stainless steel. Naturally stabilized, it may show turbidity or deposit. A rosé wine with a more concentrated color, onion skin with hints of copper. Delicate aromas of red fruits and fermentation, like brioche. In the mouth, it has remarkable acidity and minerality, with touches of spices, especially black pepper. It has a dense yet elegant texture, quite salivating at the end as it calls for food. Extremely gastronomic. Contains sulfites.

The white grape varieties recently introduced in the Alentejo wine estates demonstrate in this wine their oenological characteristics to produce quality wine in the region of Borba. The grapes coming from vineyards with moderate productivity allow to obtain a fresh, balanced and structured wine. Harvest was performed manually and in the morning so that the temperature of the grape at the entrance to the cellar is optimum. The grapes were transported in small quantities. After crushing and total destemming of the grapes, a slight skin maceration followed by pressing, decanting by the system of cold for 24 hours and alcoholic fermentation, 30% of the wine in French and American oak barrels, with strict temperature control at 15 ° C. Stage 4 years in stainless steel tanks, 10 months in Allier Fino and 5 months in the bottle. Contains Sulfites.
