The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

The grapes that make up this wine come from old vines planted in schist soil at an average altitude of 350 meters in the region between Freixo de Espada à Cinta and Barca d'Alva, in the Douro Superior. With exposure to the Northeast, we were able to obtain full-bodied red wines with an elegant profile. Hand picking vintage. Fermentation made by grape varieties to improve the rigor in the selection of the final blend that gives rise to this wine. Fermentation takes place in small-capacity stainless steel vats, with a controlled temperature of around 28ºC. Controlled maceration in order to obtain an aromatic and elegant wine. Aging for 12 months in French oak barrels. Balance between the intense flavor of red fruits and the elegance that comes from aging in French oak barrels for 12 months. Contains sulfites.

Grapes from different plots and varieties pressed together, with whole bunch. Resulting must fermented in used French (70%) and American (30%) oak barrels, followed by regular batonnage until the date of bottling. Tartaric and protein stabilization achieved naturally during a prolonged 9-month aging in a barrel. 1800 bottles were produced. Citric and floral aromas, reminiscent of orange blossom and lime. Suggestions of vanilla, spice and beeswax add aromatic complexity. In the mouth it shows to be an elegant wine, full of minerality and freshness, reflecting well the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine, the result of the perfect maturation of the grape during the harvest and the long aging in barrel. Contains sulfites.

Night harvest, under the luminosity, brightness and company of the moon. Fermentation in barrels, under a temperature control. The wine is then subjected to a battonage process. Aromatically intense, this white immediately brings us to the tropical expression of Antão Vaz, pineapple, mango and apricot. In evidence, Viosinho reigns, bringing to us the expression “Winter”, where acidity and minerality, freshness transmit life to the group. This Winter White is aged in Hungarian oak barrels for a period of 6 months, where it acquires structure, volume and elegance, making this wine a wine with an enormous gastronomic aptitude. Grapes are harvested by hand into small boxes before being refrigerated and then pressed into a pneumatic press without destemming. Cold decanting, followed by fermentation in temperature-controlled French oak barrels and regular bottling up to one month before bottling. Aging 11 months in used French oak barrels, with regular bâtonnage and 6 months in bottle. It is a wine of extraordinary rarity, with incredible precision and definition, an expectation of longevity of 25 or more years, and immediately established itself as a cult white wine.
