The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

Transport in 20 kg boxes, destemming with crushing, pre-fermentation maceration for 48 hours, inoculation followed by fermentation in stainless steel vats below 24ºC. Aging in French oak barrels where it remains for 10 months. Good aromatic impact, with ripe white fruit and notes of wood, but forming a balanced whole. Serious and with good austerity. Good volume in the mouth and discreet but present acidity. Contains Sulfites.

The grapes are harvested into small boxes and received in the property's cellar. Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to fermentation vessels using a peristaltic pump. Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. Aging 50% of the batch aged for 6 months in third and fourth year 400L French oak barrels. The relatively fresh cycle of the year is reflected in the elegance and clarity of the aromas, which denote pine and eucalyptus and also notes of rose bush. It also reveals hints of raspberry and currant. In the mouth it is very fresh, with wild fruit flavors complemented by spicy notes from fine tannins, as well as cloves and nutmeg. Very pleasant right away, but it will improve a lot with another year or two of evolution in the bottle.

The grape varieties were vinified separately. After a very gentle pressing of the grapes, the must undergoes a cold static decanting and a 7-day “SURLIES” stage, fermentation takes place in stainless steel vats at controlled temperature, fermenting at low temperatures. The Wardrobe gives floral and citrus and Arinto brings acidity and freshness to the set. This wine is very expressive in the vanilla aromas, it has an evident and elegant freshness. The balanced acidity of this wine gives it a unique freshness and balance. Ideal for elaborate fish dishes due to its creaminess and freshness. Contains sulfites.
