Caementa is the wine that rescues the tradition of cement in Dão in a contemporary version. The grapes are harvested into small boxes and received in the property's cellar. Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to a pneumatic press where they are pressed at low pressure in order to limit the extraction of color and phenolic compounds. Fermentation then takes place in stainless steel vats at low temperatures in order to preserve all the wine's aromatic expression. After alcoholic fermentation, the wines are sulphited to prevent malolactic fermentation from starting. Soft and attractive copper color. Expressive aromas of raspberry and strawberry ice cream with subtle hints of watermelon. Mineral freshness that offers an invigorating appeal. Well defined mouth with a crunchy citric acidity, which precedes delicate currant and red berry flavors. The dry finish sustains the elegance and balance of this wine.

The winemaking is classic in stainless steel vats with smooth skin maceration. Fermentation is controlled up to 26ºC for 9 days. The aging is done in French oak barrels for 6 months. Clear appearance, strong red color with hints of garnet, reveals a deep and elegant aroma of very ripe red fruits, where the notes of plum, blueberry and cherry stand out combined with soft expressions of fine vanilla, spices and dried fruits, married with a light fragrance. balsamic and faint breath of pine forest. In the mouth it shows outstanding complexity, it is round and harmonious, with good structure and balance of well integrated tannins, promising a good aging potential. It reveals a long persistence and an exquisite bouquet, showing the character of its terroir and the personality of the grape variety. Contains sulfites.

An intense, elegant wine with volume. Beginning at the end of August, this harvest was the earliest ever harvested in Soalheiro, but it demonstrated an exceptional balance between the fruit and the acidity of the Alvarinhos of the unique terroir of Monção and Melgaço. Alvarinho grapes without late harvest were harvested in small capacity boxes and transported to the winery in a short period of time. The must obtained by pressing the whole grapes was decanted and fermented at low temperature. The fermentation took place in stainless steel until reaching the balance of sweetness and acidity intended and that dictated the final alcohol of this Soalheiro - 9%. Citrus and tropical notes of the Alvarinho variety with a balance of unusual acidity and sweetness.
