The grapes were harvested manually, transported in 35 kg boxes and selected on a sorting table. Destemming without crushing followed by pressing. Decantation after 24 hours, and fermentation in stainless steel between 14-16ºC. Stage on lees for 6 months. Open ruby-pink color. Intense nose, notes of crushed fresh strawberry, some vegetable. Fresh, crunchy attack, present acidity, with excellent salinity. Great persistence.

Mechanical harvest overnight. De-stem and light crushing, followed by thermal shock to 10ºC through a mass exchanger. Vacuum pressing, followed by cold decantation for 48h. Fermentation of each variety individually in stainless steel tanks with controlled temperature. Citrus color with greenish hints. Aroma of tropical fruit, fresh and floral. In the mouth it is fruity, has good acidity and a refreshing finish. Contains sulfites.

After cold static decanting, the musts are cleaned in stainless steel vats, spontaneously fermenting at a controlled temperature. They age in their fine lees for 6 months, without lifting them. The White Dialogue is a good example of the Niepoort profile, austere and very mineral. A fresh white, with herbaceous and citrus notes on the nose, young but showing all its aging potential, very fine and elegant, with an electric aftertaste that makes you want to repeat. Loureiro, which represents 70% of this wine's blend, contributes its floral notes, while Alvarinho is responsible for the structure of ALLO.
