At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week pellicular maceration, followed by a 9-month aging period in French and American oak casks. Deep red color, with aromas of dates, hay, plums, toasted bread, a little clove, oak wood, vanilla, chocolate. Palate with good fruit, good acidity, present but soft tannins. Long finish.

Manual harvest. In the cellar, the grapes were selected on a vibrating selection table, with total destemming and light crushing of the berry. Fermentation took place in 500L French oak barrels. Wines stabilized by cold. Light filtration. Bright citrus color. Aroma expressive, floral with notes of tropical fruits and good intensity. But with interesting complexity thanks to the signs of the granite minerality of the region. In the mouth it is dry. A well balanced acidity. Although fresh, this wine has notes of peach, apricot and has a certain creaminess. Long and elegant finish, it is a wine with a strong personality. Contains Sulfites.
