Vineyards aged 23 years. Manual harvest into 20 kg boxes. Grape selection on the sorting table. Total destemming and light pressing where the must was obtained by the open spout process. Subsequently decanted statically at low temperature for a period of 24 hours. Partial fermentation of 15% in used Hungarian oak barrels and 85% in stainless steel vats at a constant temperature of 16ºC for a period of 21 days. Natural aging in contact with fine lees for 20 months in stainless steel vats, followed by aging in the bottle for 9 months. Minimal intervention. Medium pale color, straw hue. Delicate aroma of orange blossom combined with white stone fruit. In the mouth it has a long finish, with a balanced volume.
Terras de Lava Red

The grape must was fermented with the skin to extract more color and tannin. Temperatures were controlled so that the fruity aroma was preserved. A small percentage of oak was used to complement and give structure. Light ruby color. Aroma of red fruits, wild berries involved with notes of volcanic sulfur and slight vanilla. In the mouth it is very elegant and smooth with a medium body. It ends with a pleasant and persistent salty taste. Contains sulfites.
Mariposa Reserva Red

The grapes were harvested manually into small boxes of 20 kg, with selection in the vineyard. The composition of the blend varies with the production of each variety in the vineyard. After total destemming, the grapes go to a traditional granite mill, where they macerate for about 48 hours, with temperature control. Fermentation is slow, under controlled temperature, and pumping over is done by foot treading. This wine ages for 1 year in used 225 and 500L French oak barrels. It presents a deep ruby color, with lilac hints. Complex aroma, with notes of wild berries and spices, showing a very present Touriga Nacional and well integrated barrel notes. In the mouth it is full and ripe, with firm but satin tannins. Contains Sulfites.

Attractive aromatic exuberance where notes of peach and white plum stand out, with more discreet hints of green apple and lemon, which reflects the importance of Arinto in the blend. In the mouth it has a smoky streak and sparkling acidity that gives a beautiful freshness and underlines the minerality of the soils of Fonte Souto. Made with grapes harvested from the old vines on the Ribeiro Santo property and on another plot, in São João de Lourosa, where the Dão runs, which calls the origin of this blend, made from the Encruzado variety. The must fermented under lees, then in 300L barrels and aged there, with battonage, for 6 months. After bottling, the wine was kept in the cellar for another 6 months. Clear and citrine color. Delicate aroma with notes of white fruit, aromatic herbs and a mineral profile. In the mouth tasting it shows complexity and freshness, with a refreshing minerality and citric acidity. Contain sulfites.
Adega de Borba Reserva Magnum Red

With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate.
