After crushing, the grapes undergo a thermal shock followed by foot treading for four hours in granite presses. The must is transferred to small-capacity wine vats with temperature control. In this harvest 10% of the wines were fermented with the stalks. The varieties are vinified separately. The final blend is made before bottling. Aging in 225 liter French oak barrels (45% new and 55% second year). Excellent color, vivid and deep. Floral aromas combined with red and wild fruits. Intense fruit notes, showing a long, fresh and complex aftertaste. Contains sulfites.

The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.
