Wine obtained from the formation of a white veil, also called a flower. The flower is simply the development of aerobic yeasts that are formed in the barely attested barrel, and that consumes sugars and alcohol producing acetaldehyde, resulting in very dry wines, ideal to be served as an aperitif. After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it is very complex, between notes of wild fruit, “sous-bois”, black fruit and balsamic freshness. In the mouth, it presents very fine and polished tannins that provide structure and finesse at the same time.

The grapes were harvested manually into 25Kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. 70% of the must was transferred to 500L barrels and the wine was kept in contact with the fine lees with periodic battonage. Aging for 8 months in barrels with battonage. Complex nose where the tropical fruit from the Roupeiro stands out, combined with notes of grapefruit and the freshness of the Arinto lime peel. The palate is dominated by creaminess and unctuousness. Long and persistent finish. Contains sulfites.

Adega de Borba Reserva 3x Red

With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate. Contains Sulfites.

Manual harvest, fermented part in stainless steel tank and 20% in French oak barrels. Greenish yellow color, very fresh, aromatically the fruit notes are involved in a discreet presence of the barrel where it partially fermented. In the mouth it is smooth, enveloping with a refreshing acidity. It ends long. Contains sulfites.
