Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. Using a minimalist winemaking approach, inspired by ancient techniques dating back to Roman times, the farm produces distinctive wines known for their notable acidity, ripe fruit and robust tannins. After the selection of the grapes in the vineyards of our associates, the manual harvest is carried out. In the cellar they are unloaded and immediately destemmed and crushed, followed by skin maceration (about 12 hours) in order to extract all the aromatic compounds from the film. Subsequently, the grapes are pressed with oxidation protections from which the tear must is extracted which, after static clarification, starts the fermentation in stainless steel tanks at low temperatures (15/16º) and is then transferred to French oak half barrels.
After fermentation, the wine undergoes a process of “batonnage” in the barrels for a few months, followed by aging until the end of winter, at which time it is removed from the barrels, blended and stabilized, proceeding to its filling in early spring. Wine with a crystalline appearance, defined straw color, fruity aroma with ripe tropical notes, dried fruits and honey, structured and unctuous in a fresh, complex set, with a long and persistent finish. Contains sulfites.

Produced from a vineyard over 100 years old where Arinto dos Açores dominates, but there are also Verdelho, Boal (Malvasia Fina) and Alicante white (Boal de Alicante). Harvested by hand, selection on a selection table, direct press, cold decanted 12h, first presses vinified in stainless steel in a horizontal vat, 2nd presses fermented in French oak barrels for 3 years of use, without batonnage for 9 months. Yellow citrus-straw color, iodine aroma, salt, linden. In the mouth, dense concentrated attack, acidity cuts in half and remains until the end of the tasting, salt and iodine, it is a sea slap. Contains sulfites.
