Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Made with grapes harvested from the old vines on the Ribeiro Santo property and on another plot, in São João de Lourosa, where the Dão runs, which calls the origin of this blend, made from the Encruzado variety. The must fermented under lees, then in 300L barrels and aged there, with battonage, for 6 months. After bottling, the wine was kept in the cellar for another 6 months. Clear and citrine color. Delicate aroma with notes of white fruit, aromatic herbs and a mineral profile. In the mouth tasting it shows complexity and freshness, with a refreshing minerality and citric acidity. Contain sulfites.

Grapes ferment spontaneously in stainless steel vats at controlled temperature. The wine is also submitted to malolactic fermentation, part in stainless steel vats and the other in barrels. The wine aged for 11 months in used French oak barrels of 225 and 500 liters. It is bottled and remains in the cellar for a minimum of 9 months before going to market. Prieto Pariente La Provincia is a red wine that evokes memories in the nose of red fruits and cherries in the liqueur. In the mouth it is fleshy, with a velvety sensation thanks to its balanced tannins that give it body and complete that sweet and friendly sensation that makes it suitable for all occasions. Contains sulfites.
