Passadouro DOC White

The grapes were harvested by hand and gently pressed in a pneumatic press after the wine decant for 24 hours. 90% was fermented with temperature control and 10% in French barrels. Passadouro DOC Branco is a very elegant and fresh wine. Great expression of well-fruity fruity notes with white flowers. In the mouth we find a crunchy wine with good acidity and balanced body. Rich and long finale. Contains Sulfites.

Grapes from plot 21 of Alicante Bouschet. After de-stemming, the berries are hand-picked before crushing. 30% stems were added to the must to give more complexity and structure, which accompanied the entire fermentation. Before fermentation in stainless steel trunk-conical vats at a controlled temperature of 28ºC, maceration takes place at 10ºC for 3 days. After malolactic fermentation, the wine ages in 3000 liter French oak barrels for 12 months. The final blend is made only from the best wood and continues to age in the bottle at a controlled temperature of 15ºC. Ruby red color. Great aromatic complexity, dominated by ripe red fruit, black figs and peppers. It is a wine with strength and very fresh. It reveals a powerful and very well designed mouthfeel, it is long and the tannins are strong but silky. Contains sulfites.

Petite Syrah grapes harvested at dawn and transported carefully to the cellar, where they were partially destemmed. Subsequently, for 48 hours, a pre-fermentative maceration at low temperatures was carried out in a reducing environment. The fermentation cycle took place normally, at a controlled temperature in 20-ton vats. After the alcoholic fermentation was completed, a post-fermentative low temperature maceration was carried out for 96 hours. Malolactic fermentation took place naturally in wood, where the wine aged for a period of 8 months, and was then bottled. In the tasting it shows intense floral aromas of rosemary and rock rose, well integrated with a fragrant aroma of black plums and peppers. Structurally intense and with a well marked depth, it becomes a very pleasant and persistent wine. Contains sulfites.

Oak and chocolate notes given by the oak are present and well balanced with the fruit. Arrivals to the Quinta da Leda ans Quinta do Seixo winery, after soft crushing and total destemming, the grapes were fermented in temperature controlled stainless steel tanks. During this fermentation, it was reassembled by pump and step by robot, performing a long maceration to achieve a balanced aromatic and polyphenolic extraction. It is intended with this technology that the constituents of the quality present in the ripe grapes thus pass smoothly to the wine. At the end, and at the moment "required" by each variiey/batch, the wine was put in the vat and its masses pressed, the wine being the result of the pressing kept aside from the tear. It has a deep ruby coloc with an intense and complex aroma. Highlights are aromas of ripe red fruits and floral aromas, violet and lavender. Reveals notes of spices like pepper and cinnamon, as well as balsamic aromas the resin. It also has a very good quality integrated wood.
