The grapes were harvested by hand and gently pressed in a pneumatic press after the wine decant for 24 hours. 90% was fermented with temperature control and 10% in French barrels. Passadouro DOC Branco is a very elegant and fresh wine. Great expression of well-fruity fruity notes with white flowers. In the mouth we find a crunchy wine with good acidity and balanced body. It is a red wine from Dão produced from a single plot in the Dão in Gouveia, sub-region of Serra da Estrela. An old vine on poor granite soils, 55 years old and 600 meters above sea level is planted in the old Dão way with a mixture of white and red varieties. The grapes were fermented in a used French oak vat (40% whole bunches) only with indigenous yeasts, followed by post-fermentation maceration for 30 days.
