Tiago Cabaço 3 Terroirs Superior Red is a sublime tribute to the terroirs of three distinct properties in Alentejo: Herdade do Trocaleite, Vale Zebro and Herdade das Murças. This wine reflects the perfect union of selected grape varieties from each location, harvested at the peak of ripeness to guarantee a remarkable balance between alcohol, sugar and acidity.
Carefully vinified close to the vineyards, through gentle pressing and fermentation at controlled temperatures, the wine evolves in a seductive way. Grown in the Estremoz region, with strains ranging from 13 to 35 years old, the process includes fermentation in stainless steel vats and lagares, with foot treading, and a stage in French oak.
It has an intense ruby color, revealing aromas of ripe fruit and spices, complemented by subtle notes of barrel. The palate is rich, marked by fine but robust tannins, which promise a long and elegant aftertaste. After manual harvesting, the grapes are transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once at the cellar, the boxes are unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which are transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225 L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it presents notes of ripe black fruit, woods and balsamic nuances characteristic of the terroir of the H.O, in perfect harmony with the spicy and complex notes of the Old Vineyards. In the mouth, it presents structuring tannins balanced by the natural freshness of the wine and in harmony with the notes of aging in barrel.

The grapes are chilled and then pressed in a pneumatic press. Cold decanting, followed by fermentation in temperature-controlled stainless steel barrels and vats with regular buffering up to one month before bottling. Aging 6 months in new and used French oak barrels (30% of wine) and stainless steel vats (70%), with regular bâtonnage. It is a rich and concentrated white wine, but very precisely in citrus fruit and notorious minerality. Contains Sulfites.
