Grapes from 23-year-old vines. Manual harvest and selective choice for 20 kg boxes. Second selection of grapes at the sorting table. Crushing with total destemming. Must obtained by the open spout process with very light pressing. Fermentation in stainless steel vats at a temperature of 16ºC, for a period of 22 days. Stage in new and used French oak barrels for 18 months. Medium straw color. Delicate and balanced aroma where light citrus notes and light nuances of pine resin stand out. In the mouth, the freshness stands out in the foreground, with special emphasis on the intense mineral notes. It is a wine with great structure and complexity.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to a pneumatic press. After clarifying the must, alcoholic fermentation began in stainless steel tanks at low temperatures of around 12ºC, in order to preserve all the varietal character of the variety. Alcoholic fermentation took place for approximately 20 days, where the different components then staged for 8 months. It is a wine with a citrine-yellow color and medium intensity. In terms of aroma, it represents the characteristics of the variety in a unique way, with a predominance of aromas of grapes, lychees and white flowers and tropical fruits. In the mouth it is fresh and light, very fruity and persistent.
Quinta dos Carvalhais Mélange à Trois White

The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. After gentle destemming and pressing, the grapes were transported by gravity to small stainless steel vats with temperature control, where they were vinified, caste to caste. The alcoholic fermentation occurred for about 8 days at an average temperature of about 27 ° C. 40% of the wine aged for 6 months in used French oak barrels of 225 liters, with the rest staged in stainless steel vats. After stage it was subjected to a light glue and filtration before bottling and was bottled without stabilization treatment by cold, which can cause the formation of deposit during its aging in bottle. Intense ruby ??color with violet tint. Aroma with presence of ripe red fruits, floral notes typical of Touriga Nacional. Balsamic character with fresh menthol notes. Malvasia Preta is one of the oldest varieties in the Douro, being present among the Vinhas Velhas of the region, although it was never produced as a single variety. With a distinct profile, it is combined with varieties such as Rufete, Tinta Francisca and Bastardo, which present more exotic and elegant wine profiles, living on intensity and acidity, as opposed to the structured and potent profile that the Douro usually presents us with. The curiosity that leads us to experiment with Malvasia Preta, essentially arises from the fact that it is an original variety from the Douro, being present in the region and resisting the harsh conditions of the terroir. Quinta das Marias Encruzado White

Manual harvesting in 20 kg boxes. The grapes were destemmed and crushed, followed by cold skin contact for 18 hours. After pressing and static decanting, alcoholic fermentation took place in a stainless steel vat with controlled temperature (18 ºC) for 17 days. After the fermentation, it was aged on fine sludge for 3 months, and bâtonnage was carried out during the first month and a half. For almost 15 years, Quinta das Marias has produced 100% wine from the Encruzado variety. Encruzado is probably one of the least expressive Portuguese white varieties while young, expressing its full potential over several years in the bottle. Contains sulfites.
