Founded in 1920 by the brothers José, Manuel and Albano Costa, Caves São João is a family business that was originally dedicated to the marketing of fine Douro wines and liqueurs. Today, the oldest family-run wine company still operating in the municipality of Anadia, in the 1930s, it passed the ban on the production of Porto wines outside Vila Nova de Gaia, to sell Bairrada table wines. At the end of the 50’s, one of the most famous wine brands in the Bairrada region – the “Frei João” – was born and, a little later, the “Porta dos Cavaleiros” brand from the Dão region. Mechanical harvest at night. De-stem and light crushing, followed by thermal shock to 16ºC through a mass exchanger. Cold pre-fermentation maceration for 48h. Fermentation in conical stainless steel vats at controlled temperature. Finished with a partial stage of the blend in used 300L and 500L French oak barrels for nine months. Intense and concentrated ruby color. Aroma dominated by fresh wild fruit, perfectly integrated with the toasted and spicy notes from aging in barrels. The grapes are crushed with partial destemming, followed by light automatic pressing. The must was managed by gravity and decanting, fermentation took place at temperatures between 16 and 18 ºC. After fermentation, the wine was set on lees with a nitrogen-based bâtonnage. The wine was stabilized by cooling and light filtration before bottling. Golden color, balanced with good fullness. There are notes of white pear, butter, underripe yellow plums, lemon blossom, chamomile flowers and a nice aftertaste of camphor. Contains sulfites.
