All varieties are vinified by direct pressing. Cinsault and Tibouren in stainless steel vats. Grenache & Rolle are partially vinified in tulip-shaped concrete vats with a rounded bottom. This ovoid shape gives rise to a natural convection movement that suspends the lees creating the same effect as a batonnage and gives the wine a lot of structure. It has a very clear light pink color with bluish reflections. This wine offers an elegant nose with delicate notes of grapefruit and white flowers. Fresh and balanced, the palate is lively and reveals seductive aromas of citrus fruits and marine iodine. Contains sulfites.

The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose.
