The different harvested plots were vinified separately where the grapes passed on a selection mat, subsequently undergoing destemming and crushing, being moved by gravity to stainless steel fermentation tanks. Pre-fermentative maceration was carried out at low temperatures ranging from 24 to 48 hours depending on the variety, followed by alcoholic fermentation at temperatures between 25-27ºC. After the alcoholic and malolactic fermentation in stainless steel tanks, the wine was transferred to 225L oak barrels. Menin Reserva Red is a wine that has a ruby color, a full aroma of fresh fruit, with notes of wild red fruits, blackberries, plum, in perfect harmony with the spicy nuances conferred by the aging in barrel. In the mouth it has a solid structure, with lively but polished tannins and great freshness and balance.

Manual harvest for 12 kg boxes. Manual selection on a vibrating sorting table, followed by destemming and light crushing. Cold pre-fermentation maceration for 48 hours. Alcoholic fermentation takes place in temperature-controlled stainless steel vats. After pressing, the wine is transferred to 500L French oak barrels, where it undergoes malolactic fermentation and ages for another 10 months. Deep ruby color. Aroma dominated by fruit, ripe cherry and fresh plum, in perfect balance with light toasted notes from aging in wood. Manual selection on a vibrating sorting table, followed by direct vacuum pressing, with the whole grape, Blanc de Noirs technique. Cold decanting for 48 hours. Fermentation in temperature-controlled stainless steel tanks for 16 days. Bâtonnage weekly for two months. Pale salmon color. Exuberant aroma of fresh fruit, blueberry and floral notes. In the mouth, the excellent acidity gives it a notable freshness, it has good structure and a full and tasty finish.

In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.
