Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were completely destemmed in small stainless steel vats, where they were macerated for 24 hours at low temperature, before starting alcoholic fermentation, with indigenous yeasts and controlled temperature. Alcoholic fermentation took place in stainless steel vats, with gentle mechanical treading for good color and aroma extraction. After fermentation, it was transferred to second year French oak barrels, where it remained for 12 months, completing the malolactic fermentation here. Intense ruby color, notes of vanilla, cocoa and chocolate. In the mouth it is balanced and fresh, with present tannins and a long and soft finish. It is an elegant and harmonious wine, it is focused. Spice notes like white pepper, cinnamon, with more complex and more rustic aromas.

It is a Dão red wine produced from a single plot in Dão in Gouveia, sub-region of Serra da Estrela. An old vineyard on poor granite soils, 55 years old and at an altitude of 600 meters, is planted in the old Dão way with a mixture of white and red grape varieties. The grapes were fermented in a used French oak vat (40% whole bunches) with indigenous yeasts only, followed by post-fermentation maceration for 30 days. Texture Pura red aged for 16 months in a used 3,000L French oak barrel and in used 225L French oak barrels for 16 months. It is a distinctive red wine, with delicate aromas of fresh red fruits, such as cherry and currant, some spices and forest aromas. In the mouth, it has remarkable acidity and minerality, very fine tannins. It is refined and pure with the ever present fruit. Long and complex finish.

Dão wine, Casa da Passarella O Énologo - Vinhas Velhas, is born from a single vineyard with 80 years, so it is through it that we intend to assume the unique terroir of that parcel. The old vineyard is a set of vines of about 24 different grape varieties (including some white grape varieties, as was absolutely normal at the time) that, over the course of almost a century, have naturally adapted to that plot, in perfect harmony. The harvest is manual and done in one go, with the fermentation of the entire blend of grapes made in a traditional cement vat. As a result of the natural balance given by the vine, fermentation takes place spontaneously, without any need to correct the must. So we take over our terroir - with a minimalist wine in our cellar.
